Banana Chocolate Chip Cake

Hi Everyone!!

I am linking up with “Quite the Blog” for Saturday Morning Coffee!

I thought I would share a delicious recipe for you this Saturday morning. It is Banana Chocolate Chip Cake with a cream cheese icing!  It is a tad early to think about eating cake, but I love my sweets and you may have a special event that you are planning this weekend and this cake could be a winner. It was very moist and the perfect amount of sweetness (not to sweet). I made the cake the night before I served it and let the cake sit covered overnight. I iced it the next day and added some sprinkles to sparkle it up.

Banana Chocolate Chip Cake
Ingredients:
1/2 cup butter or margarine
1 1/4 cups sugar
2 large eggs
2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup milk
1/2 teaspoon vanilla
3 pureed bananas, very ripe
¾ teaspoon baking soda (add to pureed bananas)
¾ cup chocolate chips (can add less or more depending on your preference)
Cream Cheese Frosting:
1/2 stick butter, softened
8 oz. cream cheese, softened
1 box powdered sugar (1 lb.)
2 teaspoons vanilla extract
Directions:
1.  Preheat oven to 350 degrees F. Grease and flour a 9x13" baking pan or two 9" layer cake pans.
2.  Cream butter, sugar and eggs. Mix flour, salt and baking powder together in a separate bowl.
3.  Add the milk and flour (alternating, beginning and ending with flour) to the creamed butter mixture,
4.  Add vanilla and mashed bananas (with the baking soda added to the bananas) to the mixture.
5.  Fold in the chocolate chips to mixture.
6.     Bake 9" for 25-30 minutes, 9x13" for 35-40 minutes or until a toothpick comes out clean.
Frosting:
1.     Mix cream cheese and butter until smooth, add sugar and vanilla and blend well.
2.   Spread on the cooled cake and decorate with sprinkles, chocolates, candy or whatever your heart desires.
